for the key learn I really do not understand what's the use of that when I click on the keylearn it opens a window full of text and I do not know what it is meaning
I suppose you speak about the 'Global midi & key learn' line of the 'setup' menu ?
It's a panel where you can map to midi or to keyboard all controls of the Usine interface.
another use of the key learn is to map your own controls.
here a simple example to let you understand the concept, imagine you have a switch in your patch, and want to assign it to a key of your keyboard. right click on the switch to bring the contextual menu : choose 'Key Learn' and just after, push the key you want to assign to. you'll notice a little yellow square on top right of the switch meanning it has a key assigned. now, if you push the key, the switch follow.
midi learn is the same, but with midi controllers

You have to provide the piano roll with the midi signal of your midi keyboard through the midi input module, assuming your midi keyboard is identified in the 'midi in' tab of the 'setup' menu' and you know on what midi channel the piano emit, something like that :
after that, you just have to push on the rec switch to begin to rec your piano session, push rec again to stop the recording.

it's the same principle than midi learn, but with the pc keyboard. you can assign some control command from your pc keyboard.
